Vegetable Manchurian with Gravy is a popular Indo-Chinese dish made with deep-fried vegetable balls served in a flavorful, slightly spicy, and tangy gravy. It’s perfect as a starter or main course, usually paired with fried rice or noodles.

Ingredients:

For the Vegetable Balls:

  • 1 cup mixed vegetables (carrot, beans, cabbage, and capsicum), finely chopped
  • 2-3 tbsp cornflour
  • 2 tbsp all-purpose flour (maida)
  • 1 tsp ginger-garlic paste
  • 1-2 green chilies, finely chopped (optional)
  • Salt to taste
  • 1/4 tsp black pepper powder
  • Oil for deep frying

For the Gravy:

  • 2 tbsp oil
  • 1 onion, finely chopped
  • 1 capsicum, finely chopped
  • 1 tbsp ginger-garlic paste
  • 2-3 tbsp soy sauce
  • 1 tbsp chili sauce
  • 1 tbsp tomato ketchup
  • 1 tsp vinegar
  • 1/2 cup water (adjust to gravy consistency)
  • 1/2 tsp sugar (optional)
  • Salt to taste
  • 1/2 tsp cornflour (mixed with water for thickening)
  • Fresh spring onions for garnish

Instructions:

Prepare the Vegetable Balls:

  1. Combine vegetables: In a mixing bowl, combine finely chopped vegetables, ginger-garlic paste, green chilies, salt, black pepper, cornflour, and all-purpose flour.
  2. Shape the balls: Mix everything well, then shape the mixture into small balls (bite-sized).
  3. Deep fry: Heat oil in a pan or wok for deep frying. Fry the vegetable balls until golden brown and crispy. Drain on paper towels to remove excess oil.

Prepare the Gravy:

  1. Heat oil in a wok or large pan. Add chopped onions and capsicum, sauté until they soften.
  2. Add ginger-garlic paste and sauté for a minute until aromatic.
  3. Add sauces: Stir in soy sauce, chili sauce, ketchup, and vinegar. Cook for another 2-3 minutes.
  4. Make the gravy: Add water, sugar (if using), and salt. Bring it to a simmer.
  5. Thicken the gravy: Stir in the cornflour-water mixture and cook until the gravy thickens to your desired consistency.
  6. Combine: Gently add the fried vegetable balls into the gravy. Mix lightly so the balls are coated with the sauce.

Serve:

  • Garnish with fresh spring onions.
  • Serve hot with fried rice or noodles.

Enjoy this crispy, tangy, and flavorful Vegetable Manchurian with Gravy!
